Was watching lifestyle food channel in sydney the other night and suddenly got this urge to cook up some fish when i got back to sg, so here it goes; Manage to get snapper fillet instead of other white fish steak, wasnt really looking for cod as i prefer to pan fry cod with just the basics, (salt pepper, balsamic parsley and yes olive oil..) the menu i thought of goes like : panfried snapper fillet, top with bacon with sauted spinach ( VERY YUMMMY) and roasted potatoes. Sauce of choice : mango/ginger sauce for tat sweet and fruit punch..(RIGHt ON!) preparation was quite simple , just tat u need 2 frying pans if u wana sauted ur spinach and pan fry ur fish at the same time , which also means more stuff to wash later on..(damn...) the mango sauce is more work cos i gotta slice the mango (pretty big) and some ginger, and blend in everything with dijon mustard and some chicken stock,. This sauce should go pretty well with the potatoes and i guess from the feedback i got from my best frd Andy and wife Lyn, it does seemed like a good idea hehe.
That empty plate u see there is bascially a finished dish of baked potatoe with prosciutto ham (seems like i keep using this expensive ham huh,..lol wat to do man, it taste so good compared to bacon...)
and of cos topped with the prosciutto ham , so what u get in the end is a soft textured kinda pie with the taste of cheese and ham to give the extra flavouring. I asked dear if she likes it and yeah, THUMBS Up!
